Orsi Vigneto San Vito is located in the hills outside of Bologna, in the town of Valsamoggia, an area that has historically been dedicated to viticulture. In order to fully respect this and to produce true wines of this terroir, they practice agriculture which revitalises the soil, stimulates the plants, and produces fruits with a strong connection with the area. In the cellar they try not to lose this heritage by avoiding invasive oenological interventions. The fermentations are spontaneous without the use of selected yeasts, and there is no clarification or filtration on the wines. This is not a marketing strategy for them, but rather, a matter of taste: they want their wines to each have a distinct, non-standardised personality. The farm also breeds Mora Romagnola pigs in a free-range. They respect nature, excluding synthesis products, from a closed-loop perspective to preserve biodiversity.
